Ingredients
- 2 tablespoons unflavored gelatin, about 14 grams
- ¼ cup collagen peptides, about 30 grams
- ¼ cup natural sweetener, such as stevia, erythritol, or monk fruit, or to taste
- 1 cup filtered water
Instructions
- Measure 1 cup filtered water.
- Heat the water until small steam wisps appear, about 160 to 170 degrees Fahrenheit.
- Pour the heated water into a medium mixing bowl.
- Add 2 tablespoons unflavored gelatin directly into the hot water.
- Whisk continuously for about 1 minute until the gelatin granules dissolve completely.
- Sprinkle in ¼ cup collagen peptides while whisking steadily.
- Continue whisking to prevent clumps and hydrate the protein evenly.
- Add ¼ cup natural sweetener, adjusting to your preferred sweetness.
- Whisk thoroughly for 2 minutes until the mixture is smooth and fully combined.
- Taste the mixture and adjust sweetness if needed.
- Pour the prepared mixture into silicone molds, small glass dishes, or a parchment-lined square baking pan.
- Spread evenly so the gelatin sets with uniform thickness.
- Transfer to the refrigerator.
- Chill undisturbed for at least 6 hours, preferably overnight.
- Remove the set gelatin from the refrigerator.
- Cut into 1-inch cubes or desired serving sizes using a sharp wet knife.
- Store in airtight containers with parchment between layers if needed.
- Serve chilled.
Notes
Use warm water around 160 to 170 degrees Fahrenheit, not boiling water, for the best texture. Whisk collagen peptides thoroughly to prevent grainy spots. Chill for at least 6 hours so the gelatin becomes firm, creamy, and easy to slice.
