- 1 cup (240g) small-curd cottage cheese
- 3 ounces (85g) dark chocolate, 70% cacao, chopped
- 3 tablespoons (43g) unsalted butter
- 2 large eggs, room temperature
- 3 tablespoons (38g) granulated sugar
- 2 tablespoons (12g) unsweetened cocoa powder
- 2 tablespoons (16g) all-purpose flour
- ½ teaspoon vanilla extract
- ⅛ teaspoon sea salt
- ¼ teaspoon baking powder
- Butter or cooking spray, for greasing ramekins
Instructions
- Preheat the oven to 350°F and position the rack in the middle of the oven.
- Butter two 6-ounce ramekins thoroughly and place them on a parchment-lined baking sheet.
- Add the cottage cheese to a food processor or blender and process until completely smooth.
- Transfer the blended cottage cheese to a mixing bowl and set aside.
- Combine the chopped dark chocolate and unsalted butter in a microwave-safe bowl.
- Heat in 20-second intervals, stirring between each interval, until completely melted and smooth.
- Allow the melted chocolate mixture to cool for approximately 2 minutes.
- Whisk the eggs and granulated sugar in a separate bowl for 1 to 2 minutes until well combined and pale.
- Fold the cooled chocolate mixture into the blended cottage cheese until just combined.
- Add the egg and sugar mixture to the chocolate-cottage cheese mixture and fold until no streaks remain.
- Sift the cocoa powder, all-purpose flour, baking powder, and sea salt over the wet ingredients.
- Add the vanilla extract.
- Fold gently with minimal strokes until the batter is just combined.
- Divide the batter evenly between the prepared ramekins, filling each approximately three-quarters full.
- Bake for 12 to 14 minutes, until the edges are set but the centers still jiggle slightly.
- Remove from the oven and allow the cakes to cool for approximately 30 seconds.
- Run a thin knife around the inside edge of each ramekin.
- Invert each cake onto a serving plate and serve immediately while the center remains molten.
Notes
Blend the cottage cheese until completely smooth before mixing for a tender, seamless texture. Begin checking the cakes at 12 minutes and remove them once the edges are set but the centers still jiggle slightly.
