Ingredients
- 4 packets unflavored gelatin powder, about 28 grams
- 2 cups filtered water
- 2 to 3 teaspoons stevia or monk fruit sweetener
- 3 tablespoons fresh lemon juice
- 1½ cups fresh or frozen berries
- 1 teaspoon pure vanilla extract, optional
- 8 to 10 fresh mint leaves, optional, for garnish
Instructions
- Pour 2 cups filtered water into a medium saucepan.
- Heat over medium-high heat until the water reaches a rolling boil.
- Measure 4 packets unflavored gelatin into a large mixing bowl.
- Carefully pour the boiling water into the bowl with the gelatin powder.
- Stir continuously for about 2 minutes until the gelatin dissolves completely.
- Let the gelatin mixture cool at room temperature for exactly 5 minutes.
- Add 3 tablespoons fresh lemon juice.
- Add 2 to 3 teaspoons stevia or monk fruit sweetener.
- Add 1 teaspoon vanilla extract if using.
- Mix thoroughly until the sweetener is fully dissolved.
- Distribute 1½ cups fresh or frozen berries evenly across the bottom of a 9-by-13-inch glass baking dish.
- Carefully pour the prepared gelatin mixture over the berries.
- Allow the mixture to cool at room temperature for 10 minutes.
- Place the baking dish on the middle shelf of the refrigerator.
- Refrigerate for at least 4 hours, preferably overnight, until fully set.
- Use a sharp knife to cut the gelatin into equal cubes or portion-controlled squares.
- Transfer portions to chilled dessert bowls or serving glasses.
- Garnish with fresh mint leaves and extra berries if desired.
- Serve chilled directly from the refrigerator.
Notes
Use actively boiling water so the gelatin dissolves completely and sets smoothly. Let the mixture cool slightly before adding lemon juice to protect the gelatin structure. Chill for at least 4 hours or overnight for the best firm-yet-delicate texture.
