Instructions
- Crack your eggs into a medium-sized glass mixing bowl.
- Add the whole milk and a pinch of salt to the eggs.
- Whisk the mixture until the yolks and whites appear fully combined.
- Place a non-stick skillet over medium-low heat on your stovetop.
- Melt the butter until it coats the base of your pan completely.
- Pour in your egg mixture slowly without overcrowding the pan surface.
- Fold the eggs gently using a silicone spatula as they begin setting.
- Remove the skillet from the heat while the eggs still look slightly wet.
- Garnish the finished dish with fresh chives before plating immediately.
Notes
Control your heat by removing the pan from the burner periodically to prevent overcooking. Whisk the mixture vigorously before cooking to incorporate air for fluffiness. Season with salt right before cooking. Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently in a non-stick pan on low heat.
