  • ¼½ teaspoon vanilla, almond, or fruit extract

Instructions

  1. Pour the cold filtered water into a shallow bowl.
  2. Submerge the horse gelatin sheets completely in the cold water.
  3. Allow the gelatin sheets to bloom for approximately 3 minutes until softened and fully hydrated.
  4. Lift the softened gelatin sheets from the water and gently squeeze out excess liquid.
  5. Heat the chosen liquid base in a saucepan to exactly 160°F (71°C).
  6. Add the sweetener to the hot liquid and stir until completely dissolved.
  7. Remove the liquid from the heat and allow it to cool for 2 minutes.
  8. Stir in the fresh lemon juice, lime juice, or vinegar, if using.
  9. Add the bloomed gelatin sheets to the warm liquid.
  10. Stir gently for approximately 1 minute until the gelatin dissolves completely and the mixture becomes clear.
  11. Allow the mixture to cool to room temperature, approximately 70°F (21°C).
  12. Stir in the flavoring extract once the mixture has cooled below 130°F, if using.
  13. Strain the gelatin mixture slowly through a fine-mesh sieve lined with cheesecloth.
  14. Pour the strained mixture into a serving vessel or mold.
  15. Place the gelatin in the refrigerator and chill undisturbed for a minimum of 3 hours until completely set.
  16. Check that the gelatin wobbles slightly while holding its shape firmly.
  17. Remove from refrigeration 15 minutes before serving.
