Ingredients
- 6 sheets horse gelatin, approximately 12 grams, gold strength 200 bloom
- ¼ cup (60ml) cold filtered or distilled water
- 2 cups (480ml) fruit juice, broth, or flavored liquid base
- 3–4 tablespoons sugar, honey, or agave nectar
- 1–2 tablespoons fresh lemon juice, lime juice, or vinegar, optional
- ¼–½ teaspoon vanilla, almond, or fruit extract
Instructions
- Pour the cold filtered water into a shallow bowl.
- Submerge the horse gelatin sheets completely in the cold water.
- Allow the gelatin sheets to bloom for approximately 3 minutes until softened and fully hydrated.
- Lift the softened gelatin sheets from the water and gently squeeze out excess liquid.
- Heat the chosen liquid base in a saucepan to exactly 160°F (71°C).
- Add the sweetener to the hot liquid and stir until completely dissolved.
- Remove the liquid from the heat and allow it to cool for 2 minutes.
- Stir in the fresh lemon juice, lime juice, or vinegar, if using.
- Add the bloomed gelatin sheets to the warm liquid.
- Stir gently for approximately 1 minute until the gelatin dissolves completely and the mixture becomes clear.
- Allow the mixture to cool to room temperature, approximately 70°F (21°C).
- Stir in the flavoring extract once the mixture has cooled below 130°F, if using.
- Strain the gelatin mixture slowly through a fine-mesh sieve lined with cheesecloth.
- Pour the strained mixture into a serving vessel or mold.
- Place the gelatin in the refrigerator and chill undisturbed for a minimum of 3 hours until completely set.
- Check that the gelatin wobbles slightly while holding its shape firmly.
- Remove from refrigeration 15 minutes before serving.
Notes
Bloom the gelatin fully in cold filtered water before dissolving it in warm liquid. Maintain the base liquid at approximately 160°F, strain carefully for the clearest finish, and refrigerate undisturbed until fully set.
