Ingredients
1 lb lean ground beef
2 medium sweet potatoes, cubed
1 cup cottage cheese
2–3 tbsp hot honey
1 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika
¼ tsp black pepper
Fresh chives, chopped (optional)
Sesame seeds (optional)
Salt to taste
Instructions
Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, garlic powder, paprika, and salt on a baking sheet. Roast for 25–30 minutes until crispy and tender.
In a skillet over medium heat, cook ground beef over medium heat until browned and cooked through. Season with black pepper.
Divide cooked beef and roasted sweet potatoes into 4 bowls. Top each with a dollop of cottage cheese and drizzle with hot honey. Garnish with chives, sesame seeds, and an extra drizzle of honey if desired.
Notes
For a dairy-free option, substitute cottage cheese with a non-dairy alternative. Roast sweet potatoes in advance for meal prep. Adjust hot honey quantity to taste. Serve with a side salad for extra fiber.
