Ingredients
Beef flank or sirloin steak, 1 pound (sliced thin against the grain)
Broccoli florets, 4 cups fresh
Avocado oil, 2 tablespoons
Tamari or coconut aminos, ¼ cup
Garlic, 3 cloves (minced)
Ginger, 1 tablespoon (julienned)
Xanthan gum, 1 teaspoon
Sesame oil, 1 teaspoon
Green onions, 2 stalks (sliced, optional garnish)
Instructions
Heat 1 tablespoon avocado oil in a large skillet over medium-high heat.
Sear beef slices for 1-2 minutes per side until browned but not overcooked.
Remove beef and add remaining 1 tablespoon oil to the pan.
Sauté garlic and ginger for 30 seconds.
Add broccoli and tamari, stir for 2 minutes.
Prepare sauce: mix 2 tablespoons broth/water, 1 teaspoon xanthan gum, and 1 teaspoon sesame oil.
Return beef to the pan and pour in sauce. Simmer 1-2 minutes until thickened.
Garnish with green onions before serving.
Notes
Use chicken or ground beef as protein alternatives
Coconut oil can substitute avocado oil
Adjust tamari amount to taste
Store leftovers in an airtight container for 2-3 days
Blanch broccoli 1 minute in boiling water for extra crisp-tender texture
