Ingredients
Ground Beef 1 lb (450g)
Fresh Spinach 4 cups (120g)
Olive Oil 2 tablespoons
Garlic 2 cloves, minced
Salt 1 teaspoon, to taste
Black Pepper 1/2 teaspoon, to taste
Grated Parmesan Cheese 1/4 cup
Avocado 1 medium, sliced or diced
Sour Cream 1/4 cup, optional
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, breaking into small pieces. Drain excess fat if needed.
Stir in minced garlic and cook for 1-2 minutes until fragrant.
Add fresh spinach to the skillet and cook until wilted, 2-3 minutes.
Season with salt and black pepper to taste.
Divide the beef and spinach mixture among 4 bowls.
Top each bowl with avocado slices, parmesan cheese, and a dollop of sour cream (if using).
Notes
Substitute ground turkey for lower fat content.
Use avocado oil instead of olive oil for a higher smoke point.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Omit sour cream if avoiding dairy.
