Ingredients

1 pound flank steak, sliced against the grain
4 cups fresh spinach
2 tablespoons coconut aminos
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon grated ginger
1/2 cup beef broth (low-sodium)
1/4 cup avocado oil
Pinch of salt and black pepper
Optional: onions or bell peppers for added veggies

Instructions

Preheat oven to broil if using, or set a large skillet to high heat
Pat beef slices dry and season with salt and pepper
Heat 2 tbsp avocado oil in skillet until smoking hot
Sear beef in a single layer for 1-2 minutes per side until browned
Add garlic and ginger (fresh) to the pan, sauté for 30 seconds
Toss in spinach until wilting (2-3 minutes)
Pour in coconut aminos, sesame oil, and 1/2 cup beef broth
Simmer 2-3 minutes to thicken the sauce
