Ingredients
1 lb beef sirloin, thinly sliced
2 cups fresh tomatoes (chopped)
1/4 cup beef broth
2 tbsp avocado oil
1 tbsp sesame oil
2 cloves garlic (minced)
1 tbsp fresh ginger (minced)
2 tbsp coconut aminos
1 tsp erythritol
Salt and pepper to taste
2 green onions (sliced, for garnish)
Instructions
Preheat wok or skillet over medium-high heat
Add avocado oil and swirl to coat
Add green onions and sauté for 2 minutes until fragrant
Add beef and stir-fry for 4-5 minutes until browned
Push beef to the side, add garlic and ginger; cook for 1 minute
Add tomatoes, broth, coconut aminos, and erythritol
Simmer for 5 minutes until mixture thickens
Season with salt and pepper to taste
Serve immediately or let rest for 5 minutes before serving
Notes
Use a non-stick pan to achieve crisp edges without excessive oil
Marinate beef in 1 tsp coconut aminos for 15 minutes for deeper flavor
Store leftovers in an airtight container for up to 3 days
Best served with cauliflower rice or zucchini noodles
