Instructions
Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper
Toss cauliflower florets with hot sauce, melted butter, garlic powder, salt, and pepper until evenly coated
Spread florets in a single layer and roast for 25-30 minutes, flipping halfway, until golden and crispy
In a separate bowl, mix blue cheese, sour cream, lemon juice, and chives until smooth
Serve roasted cauliflower with blue cheese dip on the side
