Ingredients

4 cups cauliflower rice
3 tablespoons soy sauce
1 tablespoon sesame oil
3 cloves garlic, minced
1 tablespoon ginger, grated
2 scallions, thinly sliced
1 tablespoon white miso paste
1 tablespoon brown sugar
Black pepper, to taste

Instructions

Heat 1 tablespoon sesame oil in a large skillet over medium-high heat
Add garlic and ginger, sauté for 1-2 minutes until fragrant
Add ground beef, breaking it apart with a spatula, and cook until browned
Stir in soy sauce, white miso, brown sugar, and black pepper
Reduce heat to medium-low, cover, and simmer for 5-7 minutes while the cauliflower rice cooks
In a separate pan, stir-fry cauliflower rice with remaining 1 teaspoon sesame oil until tender
