Ingredients
1 1/2 pounds ground beef (80/20 lean to fat)
1/2 cup finely chopped mushrooms (such as cremini, button, or shiitake)
1 egg, lightly beaten
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter
1/2 cup finely chopped mushrooms
1 1/2 cups beef broth (low-sodium preferred)
1/4 cup heavy cream
1 tablespoon fresh thyme leaves or dried thyme
1 garlic clove, minced
Instructions
Combine ground beef, chopped mushrooms, egg, onion powder, garlic powder, thyme, salt, and black pepper in a mixing bowl. Mix well until just combined. Form the mixture into four evenly sized patties, about 3/4-inch thick.
Heat a skillet over medium-high heat and add butter. Sear the patties for 3-4 minutes per side until browned and cooked through. Transfer the cooked patties to a plate and keep warm.
In the same skillet, add the remaining finely chopped mushrooms and cook for 2-3 minutes until softened. Add minced garlic and cook for 1 minute.
Pour in beef broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer. Reduce heat to medium, and let simmer for 5-7 minutes.
Add fresh thyme and heavy cream, stirring well until the gravy reaches a smooth, velvety consistency. Taste and adjust seasoning with additional salt or pepper if needed.
Return the Salisbury steaks to the skillet to reheat slightly or serve separately, spooning the mushroom gravy generously over each steak.
Notes
Use keto-friendly ground beef for best results. Gravy can be made ahead and stored in the refrigerator. Adjust the amount of heavy cream for desired consistency. For more flavor, use bone broth instead of regular beef broth.
