Ingredients

1 lb ground turkey
4 cups fresh spinach
2 tbsp avocado oil
2 cloves minced garlic
1/4 cup coconut aminos
1 tsp grated ginger
Salt and pepper to taste

Instructions

Heat avocado oil in a large skillet over medium-high heat
Add ground turkey and cook until browned and no longer pink
Stir in minced garlic and grated ginger, sauté for 1 minute
Toss in fresh spinach and cook until wilted
Pour in coconut aminos and stir to coat evenly
Season with salt and pepper
Cook for 2-3 minutes until flavors meld
Serve warm as is or over cauliflower rice

Notes
