Ingredients
6 large eggs
1 ripe avocado
2 tablespoons mayonnaise
1 tablespoon fresh lime juice
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 teaspoon chopped chives
Pinch cayenne pepper
Instructions
Place eggs in a single layer in a pot and cover with cold water.
Bring to a boil, then immediately remove from heat, cover, and let sit for 10 minutes.
Transfer eggs to an ice bath and chill for 10 minutes.
Peel and cut eggs lengthwise; set whites aside.
Mash 1 avocado in a bowl until smooth.
Scoop yolks into the same bowl and mix with mayonnaise, lime juice, Dijon mustard, garlic powder, sea salt, black pepper, and cayenne.
Stir in chopped chives.
Spoon the yolk mixture into the egg white halves, smoothing the tops with a knife.
Notes
Use a piping bag for neater filling
Prepare the yolk mixture up to 2 days ahead and refrigerate
Keep deviled eggs chilled until serving for firmer texture
