Ingredients

1 lb ground beef (80/20)
1 small English cucumber
1 cup plain Greek yogurt
2 cloves garlic, minced
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 tbsp chopped fresh parsley
1 egg (optional binder for patties)
1 small red onion (for garnish)
Lemon wedges (for serving)

Instructions

Combine ground beef, garlic, cumin, coriander, paprika, salt, pepper, and egg (if using) in a bowl. Form into 4 oval patties
Heat olive oil in a nonstick skillet over medium-high. Cook patties 4-5 minutes per side until browned
Slice cucumber into ribbons using a peeler or mandoline
In a bowl, mix yogurt with a splash of lemon juice and a pinch of salt
Layer cucumber ribbons in bowls, top with cooked kofta patties
Spoon yogurt sauce over patties and garnish with parsley and thinly sliced red onion
Serve with lemon wedges
