Ingredients
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1/3 cup erythritol
1 tsp pure vanilla extract
1/4 tsp sea salt
12 fresh blackberries
Instructions
Chill mixing bowl and whisk for 15 minutes
Whip heavy cream until stiff peaks form
Mix cocoa powder, erythritol, vanilla, and sea salt in separate bowl
Fold cocoa mixture into whipped cream until smooth
Spoon half a cup of mousse into each of 6 ramekins
Top each with 2 fresh blackberries and refrigerate 1 hour before serving
Notes
Use cold bowl/whisk for better results
Store covered in refrigerator up to 72 hours
