1 cup almond butter
1/2 cup fresh or frozen blueberries
2 tbsp low-carb sweetener (erythritol, monk fruit)
1/4 cup almond flour
1/4 tsp salt
1 tsp vanilla extract
Instructions
Mash blueberries with a fork or potato masher
Mix with almond butter until smooth
Add sweetener, almond flour, salt, and vanilla
Stir until thick and cohesive
Scoop into 12 evenly sized balls using a spoon
Chill in fridge for 15 minutes before serving
Notes
Use frozen blueberries if fresh are unavailable
For firmer bites, refrigerate for longer
