6 large eggs
6 slices turkey bacon
1 cup shredded cheddar cheese
1/2 cup diced bell pepper
1/4 cup diced onion
1/4 cup chopped spinach
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or ensure it’s well-greased.
Whisk eggs in a bowl until fully combined. Stir in turkey bacon, cheddar, bell pepper, onion, spinach, olive oil, garlic powder, salt, and pepper.
Divide the mixture evenly among the muffin cups. Bake for 18-20 minutes until golden and firm.
Let cool slightly before serving. Store in an airtight container for up to 5 days, or freeze for up to 1 month.
Notes
Freeze baked muffins in a single layer on a baking sheet before transferring to a freezer bag.
Substitute spinach with kale, mushrooms, or tomatoes for variety.
Serve with avocado or a side of Greek yogurt for extra protein.
