Ingredients

Scale

2 ripe avocados
1/4 cup unsweetened cocoa powder
1/3 cup erythritol or stevia
1 tbsp lime juice
1 cup mixed fresh or frozen berries (strawberries, blueberries, raspberries)
1/2 cup full-fat coconut milk
1 tsp pure vanilla extract
1/4 tsp salt
Optional: 1/4 tsp ground cinnamon

Instructions

Peel and pit avocados, then add to blender with cocoa powder and sweetener
Blend until smooth. Scrape down sides.
Add lime juice, coconut milk, vanilla, and salt. Blend until creamy.
Fold in half of the berries (leave whole berries for garnish if desired)
Chill mousse in covered container for 2 hours. Let sit 10 minutes before serving
Top with remaining berries and cocoa dust if desired

Notes

Use frozen berries (thaw and drain) for thicker mousse
Adjust sweetener to taste (erythritol may cause slight aftertaste)
Store in fridge up to 3 days. Freeze up to 2 months (thaw 1 hour before serving)
