Ingredients

4 cod fillets (about 6 oz each)
1 cup fresh cherry tomatoes, halved
2 medium zucchinis, thinly sliced
4 garlic cloves, minced
2 tbsp olive oil
1/4 cup fresh parsley, chopped
1 tbsp fresh basil, chopped
1 tsp paprika
1 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
Optional: 1/4 cup shredded Parmesan cheese

Instructions

Preheat oven to 375°F (190°C)
In a large oven-safe skillet, heat olive oil over medium heat
Add garlic, sauté 1 minute until fragrant
Add zucchini slices and cook 2-3 minutes until just tender
Add cherry tomatoes and herbs, season with spices and salt/pepper
Spoon vegetable mixture into oven pan
Place cod fillets on top
Sprinkle optional Parmesan cheese
Bake 18-22 minutes until fish is opaque and flakes easily

Notes

Use fresh herbs if available
Serve with lemon wedges for brightness
Leftovers keep well in fridge for 3 days
