Instructions
Preheat oven to 350°F (180°C) and spray a muffin tin with olive oil
Sauté chopped onion and bell pepper in a skillet for 5 minutes until softened
Cool vegetable mixture completely, then combine with cooked turkey in a bowl
Add egg whites, baking powder, garlic powder, oregano, paprika, salt, and pepper, mix thoroughly
Portion mixture evenly into prepared muffin tin, press gently to form tight cakes
Bake 22 minutes or until golden and firm to the touch
Cool for 10 minutes before removing from tin
