Ingredients
4 boneless skinless chicken breasts
1 cup fresh strawberries, halved
1/2 cup fresh blueberries
4 cups baby spinach
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Juice of 1 lemon
Instructions
Preheat grill or grill pan to medium-high heat.
Place chicken breasts on a plate and season with garlic powder, salt, and black pepper.
Grill chicken for 6 minutes per side or until fully cooked. Set aside to rest.
In a bowl, whisk together olive oil and balsamic vinegar.
Toss baby spinach with half of the dressing to coat lightly.
Arrange grilled chicken on serving plates and top with dressed spinach, strawberries, and blueberries.
Drizzle remaining dressing over the plates and serve with lemon wedges.
Notes
For meal prep, store cooked chicken and dressing separately in the fridge. Assemble before serving.
Swap strawberries or blueberries with raspberries or blackberries for a different flavor.
Serve with a side of quinoa or zucchini noodles for added texture.
