Ingredients
1 cup almond flour
½ cup unsalted butter, softened
3 tbsp powdered sweetener (erythritol or stevia)
Pinch of salt
2 cups heavy whipping cream
1 tbsp powdered sweetener
2 tbsp fresh lemon juice
1 tsp alcohol-free vanilla extract
1 lemon, zested and juiced for garnish
Instructions
Finely mince or pulse almond flour in a food processor to create a fine texture
In a large bowl, mix almond flour, softened butter, 3 tbsp sweetener, and pinch of salt until crumbs form
Divide mixture equally into 6 parfait cups or glasses
In another large bowl, whip heavy cream with 1 tbsp sweetener, lemon juice, and vanilla extract until stiff peaks form
Top each parfait with the whipped cream
Sprinkle remaining almond crumb mixture on top of each
Chill in refrigerator for at least 1 hour before serving
Garnish with extra lemon zest and fresh lemon juice if desired
Notes
Use alcohol-free vanilla extract for a non-alcoholic version
This recipe is best enjoyed within 24 hours to prevent the layers from melting or becoming wet.
For a richer flavor, add 1-2 tbsp of almond flour to the whipped cream mixture
Attach berries like raspberries (zero carbs) or maraschino cherries (keto-friendly) for a fruit topping
