12 medium bell peppers (red, yellow, or green)
1 1/2 cups marinara sauce (alcohol-free)
1 1/2 cups shredded mozzarella cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
Optional toppings: sliced olives, fresh basil, sliced mushrooms, cherry tomatoes, grated Parmesan
Instructions
Preheat oven to 425°F (220°C)
Cut bell peppers in half lengthwise and remove seeds and membranes
Brush each half lightly with olive oil and arrange on a baking sheet
Spread 1 tablespoon marinara sauce over each pepper half
Sprinkle with mozzarella cheese and desired toppings
Bake for 10-12 minutes, until peppers are tender and cheese is melted and golden
Notes
Use bell peppers of similar size for even cooking
Add toppings that pair well with cheese (e.g., spinach, sliced zucchini, gluten-free breakfast sausage if using)
