Ingredients

1 lb raw shrimp (peeled and deveined)
2 medium cucumbers, spiralized
2 small zucchinis, spiralized
1 avocado, diced
1 cup halved cherry tomatoes
1/4 red onion, thinly sliced
2 tbsp olive oil
Juice and zest of 1 lemon
1/4 cup chopped fresh herbs (parley, dill, cilantro)
Salt and black pepper to taste

Instructions

Spiralize zucchini and cucumbers into noodles
Pat shrimp dry, season with salt and pepper, and sauté in olive oil over medium heat until pink and opaque (2-3 minutes per side)
In a large bowl, combine cucumber noodles, zucchini noodles, cherry tomatoes, red onion, and avocado
Add cooked shrimp, lemon juice, lemon zest, and chopped herbs
Toss gently to combine and serve immediately

Notes

For firmer noodles, salt zucchini noodles for 10 minutes and pat dry
