Ingredients

12 large shrimp, peeled and deveined
2 cups grated English cucumber, moisture removed
1 cup cherry tomatoes, halved
2 tbsp extra virgin olive oil
2 cloves minced garlic
1 tsp dried dill
1 tsp dried parsley
1 lemon, squeezed
Salt and pepper to taste

Instructions

Remove moisture from cucumber by pressing with paper towels
In a bowl, marinate shrimp in olive oil, garlic, dill, parsley, lemon juice, and seasoning for 10 minutes
Pat shrimp dry and sauté in a pan with 1 tsp olive oil until pink and opaque (1-2 minutes)
Let shrimp cool slightly
Assemble bites by placing cherry tomatoes on each cucumber slice, top with cooked shrimp and a touch of lemon zest
