Ingredients

2.5 lbs beef chuck, cut into 1-inch cubes
2 medium turnips, peeled and cubed
2 cups beef broth
1 cup chopped celery stalks
1 medium carrot, sliced
1 medium onion, chopped
3 garlic cloves, minced
1 tsp dried thyme
1 tbsp fresh rosemary, chopped
2 tbsp tomato paste
2 tbsp olive oil
1 tsp salt
freshly ground pepper

Instructions

Preheat oven broiler to high or use a stovetop skillet for searing
Pat beef dry and sear in oil until browned on all sides
Add beef to slow cooker
Toss turnips, celery, onion, carrot, garlic, tomato paste, broth, thyme, rosemary, salt, and pepper into the slow cooker
Cover and cook on low for 8 hours
Adjust seasoning before serving

Notes

Peeled turnips will yield 2-3 cups usable cubes
