Ingredients
6 oz sirloin steak
2 large ripe tomatoes
6 oz fresh mozzarella balls (bocconcini)
2 cups arugula or mixed greens
1/4 red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon balsamic vinegar
1 teaspoon honey
1/4 teaspoon red pepper flakes (optional)
1 tablespoon fresh basil, chopped
Salt and black pepper to taste
Olive oil (for searing)
Fresh basil for garnish
Instructions
Heat a skillet over high heat. Sear the steak with olive oil for 4-5 minutes per side for medium (adjust time to desired doneness). Let rest 5 minutes, then slice against the grain into 1/4-inch strips.
While steak rests, slice tomatoes and mozzarella. Toss arugula with red onion, lemon juice, balsamic vinegar, honey, red pepper flakes, and 1 tablespoon olive oil.
Arrange salad greens on plates. Top with steak slices, tomatoes, mozzarella, and fresh basil. Drizzle with remaining dressing and garnish with additional basil.
Notes
For keto eaters, use arugula or romaine. Adjust steak thickness for cooking time. Substitute heirloom tomatoes for visual appeal. Store leftovers in an airtight container for up to 24 hours.
