Ingredients
2 large cucumbers
1 can (5 oz) tuna in olive oil, drained
1 ripe avocado
1 tsp lemon juice
1/2 cup finely diced red onion
1 tsp fresh dill, chopped
Pinch of salt and black pepper
Instructions
Rinse and pat dry the cucumbers
Use a spoon to hollow out the centers (1.5-2 inches thick)
In a bowl, mash tuna, avocado, lemon juice, red onion, dill, salt, and pepper
Fill the cucumber boats with the tuna-avocado mixture
Garnish with an extra dill sprig if desired
Notes
Use fresh tuna for vibrant flavor
Adjust seasoning to taste
For extra crunch, toast pine nuts or serve with cherry tomatoes on the side
