Ingredients

1 lb (450g) ground turkey
1/2 cup (120ml) buffalo sauce (non-alcoholic)
1/4 cup (25g) crumbled blue cheese
1 cup (50g) diced celery
1/4 cup (15g) thinly sliced green onions
4 large lettuce leaves (butterhead or romaine)
1 tsp olive oil
Salt and black pepper, to taste

Instructions

Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned and cooked through (about 6-8 mins). Break turkey into small pieces.
Stir in buffalo sauce and mix well until heated through. Season with salt and pepper. Remove from heat.
Divide turkey mixture among 4 lettuce leaves. Top each with 1 tbsp blue cheese, 2 tbsp diced celery, and 1 tsp green onions.
Fold lettuce leaves into wraps by tucking in sides and rolling tightly.

Notes

Adjust buffalo sauce amount to control spice level
Substitute blue cheese with feta or vegan cheese if desired
Store leftovers in an airtight container in the fridge for up to 2 days
