Ingredients
1.5 lbs ground turkey
1/2 small onion, finely chopped
2 garlic cloves, minced
1/4 cup fresh parsley, chopped
1 tsp ground cumin
1 tsp paprika
1 tsp dried oregano
1 tbsp olive oil
salt and black pepper to taste
4 large lettuce cups (romaine or iceberg)
1 medium tomato, diced
1 medium cucumber, sliced
1/4 small red onion, thinly sliced
1 tbsp fresh lemon juice
Instructions
Preheat oven or grill to 375°F (190°C)
In a large bowl, mix ground turkey, onion, garlic, parsley, cumin, paprika, oregano, 1 tbsp olive oil, salt, and pepper
Form the mixture into 12 small kebab spears (or use skewers on a grill)
Arrange on a baking sheet and cook for 12-15 minutes, until no longer pink
To serve: place kebabs in lettuce cups, add tomato, cucumber, and red onion, then drizzle with lemon juice
Notes
Use gluten-free flour if mixing ratio requires binding agents
Freeze uncooked kebabs on a baking sheet then reheat after forming into cups
Substitute zucchini or bell peppers for added variety
Adjust spice level by adding hot red pepper flakes (optional) onto the kebabs before serving
