Instructions
- Measure all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt into a microwave-safe mug or ceramic bowl.
- Stir dry ingredients together with a fork until fully combined and no cocoa streaks remain.
- Break up any sugar clumps by pressing them against the bottom of the mug.
- Pour vegetable oil into the center of the dry mixture.
- Add room-temperature water and vanilla extract.
- Stir vigorously with a fork for 20 to 30 seconds until a thick, smooth batter forms.
- Fold chocolate chips into the batter evenly.
- Reserve 1 tablespoon chocolate chips for the top.
- Press reserved chocolate chips into the surface of the batter.
- Tap the mug gently on the counter to settle the batter.
- Microwave on high for 2 minutes and 30 seconds to 3 minutes.
- Monitor during the final 30 seconds to prevent overflow.
- Stop microwaving when the center looks just set with a slight jiggle.
- Remove the mug carefully using an oven mitt.
- Cool for 1 to 2 minutes before serving.
- Run a thin knife around the mug edges if plating on a dessert dish.
- Serve immediately while the chocolate chips are slightly melted.
Notes
Do not overmix the batter, and do not overcook. The center should look just set with a slight jiggle for the best fudgy texture.
