  • Total Time: 4 hours 20 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 2 packets unflavored gelatin, 14g total
  • 1 scoop collagen powder, 10g
  • 2 tablespoons erythritol
  • 2 cups filtered water
  • 34 drops pink food coloring or natural beet juice
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Pour filtered water into a medium saucepan.
  2. Heat over medium-high heat until small bubbles appear around the edges.
  3. Slowly add unflavored gelatin while stirring continuously.
  4. Stir for about 1 minute until the gelatin dissolves completely.
  5. Remove the saucepan from heat.
  6. Let the mixture cool to room temperature for about 5 minutes.
  7. Whisk collagen powder into the cooled gelatin mixture until fully combined.
  8. Add erythritol and stir for about 1 minute until dissolved.
  9. Add pink food coloring or natural beet juice.
  10. Add vanilla extract and a pinch of sea salt.
  11. Stir until the color is evenly distributed.
  12. Pour the mixture into individual silicone molds or a glass container.
  13. Refrigerate for at least 4 hours or overnight until firm.
  14. Remove gelatin from molds gently.
  15. Store individual servings in airtight containers in the refrigerator.
  16. Serve chilled.

Notes

Do not add collagen powder to boiling liquid. Let the gelatin mixture cool slightly first to protect texture and nutritional quality. Chill for at least 4 hours for the firmest result.
