Instructions
- Pour ¼ cup cold water into a small bowl and sprinkle 2 tablespoons unflavored gelatin evenly across the water surface without stirring immediately.
- Allow the gelatin to bloom for 3 to 5 minutes until it absorbs the water completely and becomes spongy in texture.
- Heat 2 cups of your chosen fruit juice in a small saucepan over medium-low heat until steam rises visibly but the juice does not boil.
- Add the bloomed gelatin and ¼ cup sugar-free sweetener to the warm juice, stirring constantly for approximately 1 to 2 minutes until both ingredients dissolve completely.
- Transfer the gelatin mixture to a large bowl or individual serving containers and allow it to cool to room temperature for approximately 15 minutes.
- Cover the containers with plastic wrap or lids and refrigerate for a minimum of 4 hours until the gelatin sets to a jiggly, solid consistency.
- Once set, use a spoon or small knife to break the gelatin into bite-sized cubes, or serve directly from the container using a dessert spoon.
Notes
Bloom the gelatin correctly by allowing it to absorb cold water for 3 to 5 minutes before heating to prevent lumps. Heat juice until steam rises but do not let it reach a rolling boil. Add sugar-free sweetener to warm juice so it dissolves evenly. Let the mixture cool at room temperature for 10 to 15 minutes before refrigerating. Refrigerate for a minimum of 4 hours, though overnight refrigeration yields the best texture.
