- 2 cups Sushi Rice (short-grain Japanese rice)
- 8 Nori Sheets (premium grade)
- 1 cup Tempura Batter
- 1 lb Sushi-grade Tuna (or cooked shrimp/tofu)
- 2 ripe Avocados
- 1 large Cucumber (thinly sliced)
Instructions
- Gently fold nori sheets into taco shapes, dip them into light tempura batter, and fry in hot oil at 350°F for exactly 30 seconds until firm. Drain on a wire rack.
- Cook short-grain sushi rice according to package directions, then season with rice vinegar and sugar. Let cool slightly.
- Slice fresh tuna and avocado into uniform, bite-sized cubes. Mix the tuna with spicy mayo.
- Layer seasoned rice followed by the fresh fish mixture inside the crispy shells. Top with microgreens and sesame seeds and serve immediately.
Notes
Ensure the oil temperature stays around 350°F to prevent nori from absorbing too much grease. Always assemble immediately before serving so the moisture from the rice doesn’t soften the crispy shell. Keep raw fish workstation chilled.
