Instructions
- Mix softened butter and brown sugar in a small bowl until fully combined and creamy.
- Stir in vanilla extract.
- Add heat-treated flour gradually until the cookie dough filling becomes thick and moldable.
- Fold in mini chocolate chips if desired.
- Portion the cookie dough filling into 24 small balls using a small cookie scoop.
- Refrigerate the cookie dough balls while preparing the brownie batter.
- Preheat oven to 350°F.
- Line a standard muffin tin with paper liners.
- Whisk flour, cocoa powder, baking powder, and salt in a large mixing bowl.
- Beat softened butter with brown sugar and granulated sugar until light and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition.
- Stir vanilla extract into the wet mixture.
- Fold dry ingredients into the wet mixture with a spatula until just combined.
- Fold in semi-sweet chocolate chips until evenly distributed.
- Divide half the brownie batter evenly among 24 muffin cups, filling each about one-third full.
- Place one chilled cookie dough ball into the center of each brownie cup.
- Press each cookie dough ball gently into the batter.
- Top each cookie dough ball with the remaining brownie batter until cups are about two-thirds full.
- Bake for 16 to 18 minutes until brownie tops are set but still slightly soft.
- Cool in the muffin tin for 10 minutes.
- Transfer to a wire rack and cool completely before serving.
Notes
Use heat-treated flour for the edible cookie dough filling. Do not overbake the brownie bites; remove them when the tops are just set but still slightly soft for the best fudgy texture.
