  • 1 medium cucumber, sliced
  • 5 to 6 radishes, thinly sliced
  • 1 ripe avocado, sliced
  • ¼ cup sunflower seeds

Instructions

  1. Combine the fresh basil, dill, parsley, green onions, and minced garlic in a blender.
  2. Add the Greek yogurt and tahini.
  3. Pour in the fresh lemon juice and extra virgin olive oil.
  4. Add the salt and black pepper.
  5. Blend until smooth and creamy.
  6. Add water 1 tablespoon at a time until the dressing reaches a pourable consistency.
  7. Taste and adjust lemon juice, salt, or herbs if needed.
  8. Wash and dry the mixed salad greens completely.
  9. Slice the cucumber into thin rounds.
  10. Thinly slice the radishes.
  11. Slice the avocado just before serving.
  12. Toast the sunflower seeds lightly in a dry pan if desired.
  13. Place the mixed greens in a large salad bowl.
  14. Arrange the cucumber slices, radishes, and avocado over the greens.
  15. Pour the green goddess dressing over the vegetables, using about 2 to 3 tablespoons per serving.
